Hope you are having a great Sunday morning. We are having a lazy one here at the Johnson home – not going to church till 5pm, so we slept in, ate breakfast and have been reading, watching tv, etc. Love it.
I have been in a little bit of a cooking mood this weekend and wanted to share what we’ve been chowing down on. Since we got married I have been doing more cooking – mostly because we have a lot of fun gadgets now that make cooking a lot more easy and fun. I am in love with my little food processor. Seriously. Side note: I am also a messy and clumsy cook. I don’t think there are any gadgets that can help with that.
Friday night I made a tomato pie – which turned out more like a tomato casserole in a pie crust. The tomatoes make the pie crust so soggy it just kind of plops out in a big cheesy glob on your plate. But still yummy. As evidenced by the fact that Hunt ate six pieces in one setting. Ha.
Today I made a yummy pasta salad – Strawberry Basil Pesto to be exact. I even used our own basil plant, but the poor thing looks pretty shabby now – I basically had to pluck all the leaves off to make this. I talked to the plant in Spanish – so hopefully that will help mi albahaquita to grow fast so that we can make some more of this stuff before all the berries are way out of season.
I am hoping to make this for dinner tonight, except we don’t really have any more basil.
What else have we been up to? A quick trip to the mountains here and there. Reading. So much reading that I am attempting a book blog – www.bookemergencies.blogspot.com – in case you are interested. I have already read 25 books this year. Can’t stop.
